Greek Salad Cravings

Summer is right around the corner! Hard to believe that another year has come and gone so quickly. With this being said, that leaves us really only just a few short months to shape up and get bikini body ready. If you're anything like me and have constant Greek salad cravings, well, I'm about to rock your world! Eating healthy and clean doesn't have to be so dull and boring. I'm constantly coming up with new and creative ways in my kitchen to spruce up the healthy eating. I'm a foodie, I'm a Greek salad lover and I'm a health nut, which is what makes this salad perfect for my fit foods list of indulgences.

Delicious, light and completely fit list approved (according to me), I could probably eat this salad everyday with not one complaint, In fact, I think I do! During my high intensity training periods or not, this salad always leaves me feeling guilt free, and wanting more. So I'd like to introduce you all to my personal take on one of my favorite salad's and share with you my homemade version of the chopped Greek salad. I promise that after you've tried this dressing (that I've managed to keep secret for years) you'll never go back to store bought vinaigrette's. Enjoy!

Dressing Ingredients:  

      

1/4 cup Olive Oil                            

1 tsp. Salt

1/2 cup Red Wine Vinegar   

2 tsp. Basil                                

2 tsp. Dijon Mustard

2 tsp. Garlic Powder               

1 1/2 Tbsp.. Sugar (Optional, however I always use it)

2 tsp. Oregano                        

1/2  Finely Chopped Shallot

Black Pepper To Taste


*Combine all Ingredients. I usually like to make mine in the morning and let it refrigerate throughout the day. Its just a personal preference, I happen to find that it tastes better when cold and setting for a while. When ready to serve just shake and pour!

Salad Ingredients:

5 cups romaine lettuce (Aprx.)                                        

1/4 cup Kalamata Olives

1 Chopped Red Onion Small                                             

1/4 cup Pickled Beets 

1/2 cup Chopped Tomatoes (I prefer Cherry Tomatoes) 

1/4 cup Potato salad

1/2 Chopped Cucumber

1/4 cup Crumbled Feta Cheese   

*Combine all ingredients. Shake and pour on dressing. Be sure to add the potato salad on top, and Voilà, your light and fit salad is complete!
